With more than 25 years in the culinary and foodservice space—starting in Colorado’s mountain resort kitchens—Spencer blends hands-on kitchen experience with senior-level sales and supply chain expertise. He’s helped launch innovative dining concepts, built local and responsibly sourced supply chains across markets, and traveled extensively to work with farmers, fishermen, butchers, and artisans across the U.S. and internationally.

In 2025, Spencer launched Summit Culinary to offer “route finding for the peak of foodservice”—helping premium meat, seafood, and specialty food brands find their path to chefs, operators, and distributors through strategic sales, thoughtful storytelling, and grounded industry insight.
